Simple great blintzes recipe:
SHELLS:
- 2 tablespoons oil
- 1/3 teaspoon salt
- 1 1/2 cups milk or water
- 2 eggs
- 1 cup flour
1. Mix ingredients together.
2. Heat a thin coat of oil in a frying pan.
3. Put a thin layer of batter into pan, until golden brown. Flip over til the other side is golden brown.
FILLING:
- 2 egg yolks
- 2 tablespoons sugar
- 2 tablespoons flour
- 1 teaspoon vanilla
- 16 oz. cottage cheese
Filling options:
sour creme, fruit jam, chocolate spread, etc.
Roll into blintz and enjoy
